Need to lose 1 more pound!
So today and tomorrow I am staying under 1200 calories and Weight Watchers Points so that I can be at my lowest weight on Friday for our weigh in. Here is my meals for today.

Fruit Flush Again!
So I did eat too well this weekend however I did a Zumba class on Sunday so that made me feel better. I'm starting the fruit flush again today.
We have our girls trip at the end of the week. Starting next Monday I'll be back to keeping track of everything I eat! =)

Eat every 2 hours
I decided that I will now eat every 2 hours during the day and have a large dinner at night. Every snack or meal will be between 100-200 calories. Then dinner will be whatever calories I have left.
On top of this, I am still going to continue doing Weight Watchers Points Plus and try to lower my carb intakes. Oh and work out as much as time will allow me! Let's lose that 25 pounds baby!
So I start off today with 2 eggs, I'm only going to eat the yolk of 1 egg.
2 Egg White - 64 Calories - 1 Point
1 Egg Yolk - 70 Calories - 1 Point

More fruit
So yesterday and today I ate lots and lots of fruit. Starting at 8am I would eat a serving of fruit every 2 hours. It kept me full the first day, but today I'm hungry after an hour of eating my fruit. The good thing is I lost weight!
Lost 1 pound! I'm 2 pounds away from my goal. That's awesome!
My last day of boot camp is this Friday. I'm a little sad that it's over however my friend and I have decided that we're going to work out together every Tues and Thursday morning at a park. Then go hiking on Sundays. That will be fun.

Fruit Flush!
So for the next 3 days I'm doing Jay Robb's fruit flush to help me push past where I am now. I've been stuck at 155lbs for awhile and need some help. So I'll be drinking a 8oz cup of protein shake 5 times today and then a nice salad tonight.
We'll see if this works. I'm going to stick to it.

Naked Breakfast Jack
So I needed some protein today and didn't bring anything in to make so I stopped by Jack in a box and got 2 breakfast Jacks with no cheese and threw the bun away. That left me with 2 slices of Ham and two fried eggs. Yes it is not the healthiest way to eat ham and eggs but it will work! :)

Boot camp pain
Today we worked out arms and now I can't even lift them. I will say though I do feel great. I want to keep going after my 4 weeks is up. I think I'll find another one because this one is normally 200 per month which we don't have the money for that.
I use to hate working out but after going to boot camp for 3 weeks, I have this urge to go work out more. Now This doesn't mean I go crazy and work out whenever I can but it does mean that I enjoy it a little more than I did before.
They should make a drug that makes the soreness go away. I guess it's call work out more drug huh. haha

No Carb Tuesday and Thursday
So since I seem to be stuck with my weight I decided to change up a few things. I want to keep my calorie intake to less than 1200 per day and also keep within my Weight Watchers goal. On top of that I am drinking 12-15 glasses of water a day and reducing my sodium intake.
One more thing, I'm eliminating carbs for Tuesday and Thursday.
Today I had egg whites with smoked turkey and red bell peppers. I also cooked up some turkey bacon on the side.
Egg white - 1 WWPP - 34 Calories
Turkey - 1WWPP - 50 Calories
Oscar Mayer Bacon - 3WWPP - 105 Calories
Red bell peppers - 0WWPP - 8 Calories


One more thing, I'm eliminating carbs for Tuesday and Thursday.

Shredded Chicken burrito
Yesterday we cooked chicken breast in a crockpot and shredded it. We was able to make 4 extra bags of chicken to eat for the next week which is great for those nights where we have no time to cook.
Last night we made shredded chicken wrap using whole wheat tortilla. I also had a box of Green Giant nibblet corn with butter sauce which is 2 WWPP for 2/3 cup. I made mango salsa which started out as Guacamole but the advocado I bought was too hard to use. So instead I just added a mango and it actually turned out yummy.
We were out of tortilla chips so we used Stacy's pita chips instead.

Gochujang salad dressing
Last week at church we had spring mix salad with cucumber and carrots julianne and gochujang salad dressing. It was yum so I wanted to make it. So I made the dressing by adding 2tsp of vinegar to a tbsp of gochujang and a tsp of honey. Add a little sesame seeds on top and you have a yummy dressing.
I made one with one tsp of sesame oil and had Stefan test it out. He like the one with sesame oil but I stuck to the other one because it was only 2 WWPP!

Chicken and beef fajita salad
Chicken and beef fajita salad
We improvised on dinner tonight. We had chicken breast and beef tips to cook. When we went to light the grill it was out of gas so we needed to figure out what we could cook on the stove. We found some bell peppers and Sprouts Fajita seasoning and made this great dish.
Saute the bell peppers in a skillet with a little bit of oil. Cut up chicken and beef and rub with the fajita seasoning, remove bell peppers from skillet and add chicken and beef with a little bit more oil.
Put the peppers and meat on top of a fresh salad and use light ranch as a dressing or salsa. Salsa is great because it's 0 points. That's how I got to eat this great dish for only 7 points!

Breakfast burrito
Every other Fridays my work provides breakfast for us. Usually it's french toast or pancakes so I don't participate but this week it's egg and ham burritos. Unfortunately they put tons of cheese in it so I try to make it healthier for me.
First I took all the insides out of the burrito and transferred it to a Carb Balance tortilla. That probably saved me 4 points. Then I wiped the cheese off the ham so there was practically none left, then I took a little bit of the eggs out because it was a crap load in there. So now I have a much healthier burrito for 6 WWPP instead of whatever it might have been.
Yummy.. of course I had to add Sriracha sauce to it.

The Grind!
So yeah... I used up ally extra points tonight. I had 2 cosmos and 2 glasses if wine. Plus I ate 2 chicken wings and half a delicious burger. I'll be working out extra hard for the next few days bit it was worth it!

Canned chicken wrap
I made some home made salsa last night to put on top of my wrap today.
It was delicious! I used laughing cow light spreadable cheese to spread on the tortilla and some mixed in with the canned chicken.

Beef tenderloin
Steak and steamed veggies
Stefan made us a healthy wonderful dinner tonight. Filet Mignon grilled with horseradish greek yogurt sauce on top and steamed veggies with a low point cheese sauce.

The cheese sauce is very yummy. I didn't watch him make it but he explained to me.
First he made a rue by cooking 1 tbsp of butter and 1 tbsp of flour together in a pot for 3 min. He then added 1 clove of garlic minced for 1 min. Add 1/2 cup of 1 percent milk until the sauce thickens. Add 1/4 cup of parmesan cheese.

Feeling down today
Boot camp was extra hard today. We did a full body workout and it just floored me. I did eat part of a energy bar this morning and I still felt tired. When I got to work I weighed myself and I gained 2 pounds. WTH!
I'm feeling discouraged and unmotivated. Stefan keeps telling me that it's not about the weight and that I already look better but I still am feeling down.
This morning, after half my energy bar I had a bagel sandwich again and our breakfast smoothie. I added ham to my bagel for extra protein.
I think I'll go running tonight just to get me moving more.

Ham Salad
I wanted to eat a light dinner tonight so I made a ham salad. We had a left over chicken Caesar wrap in the fridge so I took the chicken out and added it to the salad for a little more protein. As a side I am dipping baby carrots in Korean spicy sauce. I'll have some fruit for dessert.

Chicken and Broccoli Casserole
I needed to use up some chicken breast and broccoli tonight. I didn't know what to make so Stefan suggested a casserole. I looked up a recipe and luckily I had some healthy alternatives to some ingredients.
Here is my recipe:
1 1/2 lb Chicken Breast
2 Crowns of Broccoli - cut up into small pieces
1 Can of Healthy Request Cream of Mushrooms
3 Tbsp of Light Mayo
1 Cup of Shredded Parmesan Cheese
First put water in a pot enough to cover the chicken. Pound the chicken out a little and then put it in the pot. Bring water to a boil on High heat and then lower it to med low. Cook for about 20-25 min or until cooked all the way through. Take chicken out, after it has cooled off cut up the chicken into small pieces.
In the baking dish, mix together the can of Cream of Mushroom soup, half a can of water and the mayo. Add the cut chicken and broccoli. Mix it all together well.
Cover the top with the parmesan cheese and put it in the oven at 350 degrees for 20-25 min.
You can put this on top of brown rice or pasta which I did.
I would say the portion is about 2/3 cup. I calculated it at about 7 WWPP per serving.
I ate it with some pasta which was about 5 points per cup. My total dinner was 12 points tonight. It was super filling!
Stefan and I were brain storming and we're going to try a few different things next time. I think we'll saute some spinach with shallots and garlic in a small pan and add it to the soup and mayo mix to give it a little more flavor. The recipe called for shredded cheddar cheese but I substituted that with parmesan cheese and I think it was very good that way. I also think I'll try cream of chicken soup next time.

Wheat Bagel Thin with Laughing Cow Cheese

For lunch today I had Subway. I didn't feel like eating a salad today so I thought I would change it up. I had a Turkey and ham sub with wheat bread and no cheese, tons of veggies and the fat free honey mustard. All together it was 8 WWPP. I added Light Pringles to it for chips which is 2 WWPP for 14 chips.

Boot Camp - Week 2 Day 1
We started off with stretches. Then went into some hardcore cardio. I about died after this. Our instructor doesn't give us much rest in between cardio sets because she says you get stronger if you push through the tired parts. Or something like that. After that we worked our legs, butt and abs. Great workout... Hard but great!
I was a little out of energy today and I think it was because I didn't have anything to eat like a Cliff bar. Instead I had a 5 hour energy drink an 2 bananas. That boosted me right up. Still sore though.
After drinking the drink I read the label an it said not to drink it if you're breastfeeding. Opps. I checked online and some say it effects the baby and some say it does not. So just to be safe, I'll wait 5 hours before pumping.
I bought one of these to try. Beef and Ostrich jerky stick. It's really good! Only 2 WWPP

Clif Banana Nut Energy Bar
Introduction
I created this blog for my motivation and to track my progress with my weight loss and fitness.
On Monday, April 4th I started boot camp with Ultimate Boot Camp in Scottsdale. I was nervous because I had no idea what I was getting myself into since I rarely work out. I am so happy that I followed through with it because I'm hooked! I've already gone 3 times and I love it.
I started Weight Watchers in January for my diet. It's been going great. It has taught me that healthy eating is a way of life and not just to lose weight. I have found that I really enjoy eating healthy foods. I'll post as many of my meals and WWP Points as possible.
In 3 weeks, my girl friends and I are going to Santa Monica beach for a girls weekend. We all made a bet that we would need to lose a certain amount of weight before the trip and if we didn't then we would have to wear a thong on the beach. At first I refused to join in on this bet. The stakes were too high! I can't ever wear a thong on the beach! But I was convinced and it has been a great motivator for me. Now I only have 5 lbs to lose in 3 weeks. I'm confident I can do it!
